Ingredients

  • For the Paste:
  • 4 tablespoons Divine Cooking oil

  • 4 cloves of garlic, peeled.

  • 1 medium-sized onion roughly chopped.

  • 1-inch piece of fresh ginger, peeled

  • 2 teaspoons ground cumin

  • 2 teaspoons ground coriander

  • 1 teaspoon turmeric powder

  • 1 teaspoon paprika

  • 1 teaspoon garam masala

  • 1/2 teaspoon cinnamon powder

  • 1/2 teaspoon ground cardamom

  • 1/2 teaspoon ground cloves

  • 1 teaspoon kasuri methi

  • 1 teaspoon salt

  • Juice of half a lemon

  • For the Butter Chicken Curry:
  • 700g boneless, cut into pieces

  • 1 cup plain yogurt

  • 1 cup tomato puree

  • 1 cup heavy cream

  • 2 tablespoons Divine Cooking Oil

  • 1 bunch of Parsley (optional)

Directions

  • Drizzle Divine cooking oil into the mortar with the spices, fenugreek leaves, garlic and ginger.
  • Grind until a smooth paste.
  • Add salt to taste and squeeze the juice of half a lemon into the paste. Mix well. Mix chicken pieces with yogurt and the prepared Butterlicious Chicken Curry Paste. In a large pan, add Divine cooking oil over medium heat. Cook the onions and marinated chicken until cooked through.
  • Add tomato puree and cream: Pour in the tomato puree or crushed tomatoes, stirring well to combine with the chicken. Reduce the heat to low and simmer for 10-15 minutes, allowing the flavors to meld together.
  • Once the chicken is fully cooked and the curry has reached your desired consistency, garnish with fresh cilantro or parsley. Serve the Divine Butterlicious Chicken Curry with steamed rice, naan bread, or roti.
