Beetroot, pear and feta salad

Ingredients

  • 3 beetroot bulbs (steamed and peeled)

  • 2 pears

  • 25g walnuts, toasted

  • 200g feta, drained

  • 2 cups micro salad leaves

  • Cotton Gold cooking oil

  • 2 tablespoons balsamic vinegar

  • 1 tablespoons honey

Directions

  • Slice the pear and arrange on a serving platter with the steamed beetroot, roasted walnuts, feta cheese and micro salad leaves.
  • Whisk together the Divine cooking oil, balsamic vinegar and honey, then season to taste.
  • Drizzle over the salad just before serving.
