Stuffed Flank Steak

1 large flank steak
¼ cup Cotton Gold Cooking Oil
5 cloves garlic, minced
¼ cup cilantro, chopped
¼ cup parsley, chopped
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon red pepper flakes
3 hard boiled eggs, quartered
1 cup mixed bell peppers, sliced
Directions
- Preheat your oven to 200°C. Using a sharp knife, carefully slice open the flank steak to create a pocket for stuffing. If desired, you can pound the meat to flatten it out and even the thickness.
- In a small bowl, mix together Cotton Gold Cooking Oil, cilantro, parsley, garlic, salt, black pepper, and red pepper flakes. Arrange the quartered eggs in three rows across the flank steak, leaving some space between them and add the sliced peppers.
- Carefully roll the meat over the filling, from left to right across the grain. Use butcher's twine to tie it securely to hold the shape. Generously season the outside of the rolled steak with the marinade mixture, salt and pepper. Spread the Cotton Gold mixture evenly over the surface of the flank steak and brush it in to ensure even coverage for the ultimate flavour beyond compare.
- Place the stuffed flank steak on a roasting pan or baking sheet lined with parchment paper.
Roast the steak in the preheated oven for approximately 20 minutes or until it reaches your desired level of doneness.
